Put away the frying pan. Break out the baking pan and a big deep kettle. It is easy and fun to prepare food with low fat cooking techniques. The meals are more healthy, too.

Braising meat in broth and vegetables creates a hearty luscious meal. Brown lean meat in a deep pan coated with cooking spray. Add chopped onions, carrots, celery and garlic. Cover with broth and allow to simmer on low heat for several hours. Braising takes longer than other low fat cooking techniques but the rewards are luscious.

Summertime low fat cooking techniques have to include the grill. Marinade lean cuts of meat overnight in a low fat sauce. Then pop the meat on a hot grill to cook quickly. Vegetables and mushrooms are fresh and flavorful when they are cooked on the grill, too. For variety thread cubes of marinated meat on skewers and grill, turning until all sides are well browned.

The favorite of wintertime low fat cooking techniques is roasting. Trim fat from a meat roast. Quickly brown all sides of the roast in a large pan coated with cooking spray. Place on a cooking rack inside a baking pan. Cook the whole thing in a hot oven, allowing the fat to drip away as it roasts. Toss cut up vegetables with low fat salad dressing, dump in a spray-coated glass pan and roast alongside the meat.

The magic of the camera in the hands of great directors makes kids all over the world dream of stardom. However, the world of cinematography is notoriously difficult to break into, but young, aspiring filmmakers take heart!

The Windy Hill Kids Film Festival, debuting this spring, is on a slightly smaller scale than the larger festivals in New York and Hollywood…for now. Opening in Menlo Park on April 9th, Windy Hill will showcase films by young film producers in 4th grade through high school. The festival organizers are expecting several films this year throughout the South Bay Area. And with inspirational leaders like its young founder, Shelby Rachleff, the sky’s the limit. Better watch out, Hollywood – this kid is dreaming big.

A 7th grader from Menlo School, Shelby has taken on no small challenge. Brought on by her love of the cinema, Shelby’s film festival will be the first of its kind in the greater Palo Alto San Mateo area. The festival will encourage dialogue between filmmakers and community members in a supportive setting.

Shelby first decided to organize a film festival after attending the Telluride Film Festival in Colorado. “This summer, I went to see the Telluride Film Festival with my parents and was inspired to try to emulate what I saw,” said Shelby. “I thought there are so many of my friends who like to play around with Apple’s easy-to-use iMovie and digital cameras – if they could share their movies with other kids, it might inspire them while also being tons of fun!”

This future producer caught the bug for filmmaking at a young age. Even as a little kid, she would think of ways to translate her favorite books into screenplays.

“I’m a pretty voracious reader,” said Shelby. “I would make notes on which of the books I read might make great movies. I’d ask my parents how I could make a career out of that when I was older.”

In pursuit of this dream, Shelby attended iD Tech Camps, a weeklong summer technology program for students ages seven to 17 at Stanford University and other prestigious universities nationwide. At camp, Shelby took Web Design and Digital Video & Movie Production courses.

“At camp, I worked in a group to produce a movie. We edited it with help from our instructor,” said Shelby. “It was really exciting using professional products like Canon digital cameras, Adobe After Effects for special effects and Apple Final Cut Pro for professional movie editing. We had a blast , learned so much and were definitely inspired to produce more films. It was a great experience to get us started.”

Shelby’s exposure to cutting-edge movie software and hardware helped focus her interest in movie making and raised the bar of her expectations. After attending camp at Stanford University, she became inspired to try new things in her movies.

“Going to iD Tech Camps made me want to use Final Cut Pro to incorporate more awesome stuff into my movies to make them more sophisticated,” said Shelby. “It was my first real introduction to using specific techniques, such as imported sounds, different logos, and experiments with lighting. It has definitely spurred my interest in filmmaking.”

“But Shelby soon learned that running a film festival is more than just producing great films. As April approaches, she is busy calling schools to confirm their participation, sending emails about the festival, checking the sound system and viewing the entries. She is also preparing her welcome speech and her introductions of the various films. The guest speaker at the festival will be Gardner Loulan, a Portola Valley native and VJ for MTV’s mtvU show.

“Gardner is really cool and will be inspiring to kids,” said Shelby. “We wanted to make this festival really non-threatening for kids – even though there’s a judge, it will be really non-threatening and a supportive environment for kids of ALL levels to show their entries. The idea is to get everyone involved and hopefully build up momentum so we can follow up with this festival in years to come.”

The Windy Hill Kids Film Festival is off to a roaring start. And with up and rising film producers like Shelby leading the way, who knows? One of today’s entrants could be inspired to be tomorrow’s big star.

Higher education in the university gives students a chance to open up. They have a completely new world to deal with. These add up to a sizeable figure. The parents, already burdened with their own expenses, cannot be burdened any more. With the finances leading them to the edge, students are hardly able to concentrate on studies. Some may even contemplate suicide; while others may take resort to drug abuse.

A student loan can be a convenient option of sponsoring your studies. Student loans help the students pay off their tuition fees, along with the other living expenses, which includes lodging, books, food and other charges. How do you fix a price point for an apartment? Take a guess? Figure it based on your carrying costs? Check comps and do a market analysis? Charge whatever the market will bear? If you’re looking to place quality tenants, less is sometimes more.

We all want to make money with income property; the more the better! When you’re looking for a new tenant, however, don’t assume that you’re going to make more money by charging more. If your property is priced high for what you’re offering, you won’t get a lot of calls, and the ones you do get will be either uneducated about your local rental market, desperate, unscrupulous, or a combination of any of these.

What to do? Perform your due diligence: check the advertisements for similar apartments, make appointments to look at them, talk to real estate agents and others in the business, and get a clear idea of how much others are getting – not just charging – for similar rentals. Why undersell? It’s a basic rule of economics that price is a great way to compete. The majority of international travelers know about Miami either from tv-shows, movies or series like Miami Ink. The hard-core party goers know Miami as a terrific Spring Break destination and generally, a place to party all night. The beach lovers come to Miami not only for the awesome weather but also for the awesome bodies they get to see on the beach. All in all, Miami is a beach destination, a party town and an incredible place to go wild.

Mexican and Spanish Tortillas are not to be confused as they are two very
different dishes. Likewise this Spanish omelete is only a distant cousin
to the French omelette as it is not folded but is quite thick and flat and normally
contains potato and sometimes bits of meat or other vegetables. Traditionally
the Spanish tortilla was taken by the peasants into the fields where it was eaten cold
between two slices of homemade bread covered in
olive oil.

It is often served in slices, again cold, in tapas bars. However it can
equally well be enjoyed hot with a side salad and some crispy bread and as
such is an important part of the health giving
Mediterranean diet.

The success of making a Spanish Tortilla lies in the turning of the
omelette and cooking it on both sides. For this I use a specially
designed wooden platter with a knob handle, rather reminiscent of a
saucepan lid, which I bought in Spain. However provided the first
side is well cooked an ordinary dinner plate will suffice. For a 4
egg Spanish Tortilla use an 8″ (20cm) frying pan or smaller,so that
it comes out good and thick. It goes without saying that
olive oil should be used to cook it in.

Basic Spanish Tortilla.

Ingredients:

I kilo potatoes

4-5 eggs

3 Tbs. chopped onion ( optional )

half tsp. salt.

50 ml. Olive oil

Either dice or slice the peeled potatoes. Heat the oil until very hot then
add the potatoes and onions, if desired. Stir to completly cover in oil
and seal them. Reduce heat slightly and continue stirring and cooking,
without browning, for about 15 minutes. Using the edge of a metal spatula
keep cutting into the potatoes, dicing them whilst they cook. When quite tender
drain off the oil into a heat proof dish and put the potatoes in a bowl.Beat the eggs and salt
together well, then stir into the potatoes and mix well.

Return the oil to the pan and reheat.Pour in the egg and potato mixture,
let it set on the bottom then turn down the heat and cook slowly so it
doesn’t brown too fast. Run your spatula around the edge of the pan to stop
it sticking and shake the pan frequently to keep it loose. When the bottom
is cooked place a plate over the frying pan and turn your Spanish tortilla
onto it, then return to the pan, uncooked side down and continue cooking for
a further 5 minutes or so. Serves 2 as a main dish or 4-6 as an appetizer or
first course.

Spanish Tortilla with Spinach.

This is a lovely healthy variation on the tradtional dish.

Ingredients:

6 Tbs. cooked spinach

2 tsps. finely choped onion

2 eggs beaten

salt and pepper

grated cheese

1 Tbs. olive oil

Drain the spinach well and chop finely, mix with the onion, salt,pepper
and beaten egg. Heat the oil in a small pan and pour in the mixture.
Cook and turn as per the traditional Spanish tortilla and sprinkle
with grated cheese just prior to serving.

Spanish Tortilla with Asparagus.

Ingredients:

400 grams potaoes

100 grams cooked asparagus tips

1 onion thinly sliced

1 Tbs. chopped parsley

50 ml. olive oil

half tsp. salt

100 grams brown breadcrumbs

6 eggs beaten

Dice the potaoes and cook with the onion in 2 tbs. olive oil, as per the
basic recipe. When tender stir in the breadcrumbs and asparagus. Fry all
for a few minutes. Mix together the eggs, parsley and salt.Add remaining
oil to the pan, heat through then add egg mixture and cook and turn as for
the basic Spanish tortilla recipe.
Serves 6 as a starter.

Spanish Tortilla with Prawns.

Ingredients:

6 prawns, cooked, peeled and chopped

2 eggs

1Tbs.finely chopped parsley

salt and pepper

2 Tbs. olive oil

Add the chopped prawms to the well beaten eggs. Season with the salt, pepper
and parsley. Heat the oil well and then cook and turn as above.
